We Can't Keep Up — And That's a Good Problem

The Rocket City is opening restaurants faster than any one publication can track. Here's what slipped through — and what's still coming.

We'll be straight with you. We publish a monthly New at the Table roundup. We verify every address, every opening date, every menu claim before it goes live. And even with all of that, the Rocket City dining scene is moving faster than we can cover it. Things are opening before we can get to them. A few good spots slipped through the cracks in our May edition — not because we weren't paying attention, but because this city genuinely will not slow down.

That deserves its own post. So here it is — the ones we missed, the ones still coming, and a full picture of just how much is happening at the table in Huntsville and Madison right now.

For context: Three restaurants opened at Clift Farm in Madison in a single month. A dive bar, an ice cream parlor, and a Korean fried chicken spot all opened without making our last roundup. This is not a slow food town anymore.

🍽️ Open Now — The Ones We Missed

La Parrilla Mexican Clift Farm
📍 Clift Farm, Madison, AL

A regional Mexican chain with locations across Alabama, South Carolina, and Georgia — and now Madison. The menu leans into bold, layered flavors: a Cubano bowl built on shredded brisket and plantains, pinto bean soup with chorizo, birria quesadillas, and tacos de tinga. One of three Clift Farm openings that landed in May alone.

Goodbye Horses Dive Bar Coffee
📍 2704 Johnson Rd, South Huntsville

From the team behind Gold Sprint coffee shop comes something completely different — a moody, retro-decorated dive bar serving craft cocktails and coffee under one roof. The name alone earns points. South Huntsville needed something with this much personality, and apparently someone delivered it while we weren't looking.

Fizzy Flapper Ice Cream Dessert
📍 Lowe Mill Arts & Entertainment, 2nd Floor

An old-fashioned ice cream parlor — sundaes, malts, banana splits — tucked into the second floor of Lowe Mill. It's the sister business to Dragons Forge Cafe, which means it fits right into the eclectic, creative energy of the building. If you haven't been to Lowe Mill lately, this is a good excuse to go back.

Etta's Tavern + Good Company Cafe — Five Points American Coffee
📍 720 Pratt Ave NE, Five Points

Two concepts, one location. Good Company Cafe — already a Huntsville favorite — opens a second location here, joined by a new dinner restaurant called Etta's Tavern in the former 1892 East building. Five Points is due for something like this. Watch this one closely.

Waldo's Chicken & Beer Southern Fried Chicken
📍 2100 Cecil Ashburn Dr SE, Jones Valley

Scratch-made Southern-style fried and rotisserie chicken with sides built the right way — collard greens, cheesy mac, the kind of thing you don't rush. Jones Valley gets a serious comfort food anchor.

Perseus Sound Bar Vinyl Bar Cocktails
📍 MidCity District

A mid-century modern vinyl bar with Mediterranean-inspired coffee, cocktails, and tapas. MidCity keeps stacking interesting concepts, and a record bar that takes its drinks seriously is exactly the kind of thing that fills a real gap in the scene.

The Adios Bar Cocktails Mexican Spirits
📍 108 NW Cleveland Ave, The Lumberyard

Birmingham's Adios Bar is coming to Huntsville this summer, landing in the Lumberyard. Classic cocktails built around Mexican-grown spirits — mezcal, tequila, raicilla. The Lumberyard keeps getting stronger, and this fits the neighborhood perfectly.

The bigger picture: Between what opened in May and what's still incoming, the second half of 2026 is shaping up to be one of the most significant stretches the Rocket City dining scene has ever had. Clift Farm, MidCity, the Lumberyard, Five Points, Jones Valley — growth is happening in every direction at once. We're going to keep tracking all of it.
